Easy Lamb Leg Roast

This simple and easy to make recipe gives you lamb leg slices crispy on outside, soft and juicy on the inside.

Here’s a very simple and easy lamb roast recipe. What I like about roasting a lamb is, there’s not much preparation to do. You can prepare it in less than 10 minutes.

I quickly prepared it before hitting the gym and when I finished my workout, the lamb leg was well marinated and ready to put in the oven.

Herbs and spices for this lamb leg roast

I have coated the lamb leg with a masala rub for this recipe. The spices give you a nice crispy crust in south Asian flavour. 

If you prefer it with western flavour, rub the lamb leg with some mixed Italian herbs and rosemary. Push in some garlic cloves inside through the cuts. 

Protein and calories in this roast leg of lamb

You will be happy to know that one serve of this lamb leg roast has around 55 grams of protein and just around 400 calories. That’s a good chunk of protein to have after a workout. 

 It’s a very healthy meal as most of the excess fat is dropped during roasting. There’s still some room for you to have some tasty carbs with it. 

Roasting time guide for the leg of lamb

You can use this timing guide to roast a lamb leg on 180C or 355F 

Rare: 20 minutes per 500 grams. 
Medium: 20 minutes per 500 grams. 
Well done: 30 minutes per 500 grams. 

Roasting temperature guide for the leg of lamb

Checking internal temperature of lamb leg while roasting is the best way to accurately roast a lamb leg as you prefer it. Use the following guide- 

Rare: 58C / 138F. 
Medium: 65C / 150F. 
Well done: 70C / 158F. 

What to serve with this lamb roast

Lamb leg roast is always best to serve with some baked potato and baked carrots. They are a healthy source of carbs too.

Ingredients
 
 

  • 5.5 lb lamb leg with bone
  • 2 tbsp mix masala
  • 1 tbsp Garam masala
  • 1 tbsp turmeric powder
  • 1 tbsp paprika
  • 1 tbsp garlic powder
  • 2 tsp salt
  • 2 tbsp olive oil
  • 1 lemon

  • Get the lamb and poke lots of small holes using a small knife.
    5.5 lb lamb leg
  • In a large pan or bucket, put all the spices, olive oil, and lemon, and mix them.
    2 tbsp mix masala, 1 tbsp Garam masala, 1 tbsp turmeric powder, 1 tbsp paprika, 1 tbsp garlic powder, 2 tsp salt, 2 tbsp olive oil, 1 lemon
  • Rub the spices well on the leg of lamb. Push some inside through the cuts using your fingers. If the rub is too thick, add a little of water. Let it marinate on room temperature for 1 to 2 hours.
  • Put a wire rack on top of the oven tray. Place the lamb on the rack.
  • Preheat the oven on 180℃ / 355℉ and roast the lamb for 80 minutes. See the timing guide above on this page.
  • Take the lamb leg out and cover with foil. Let it rest for 15 minutes.
  • Carve the lamb leg into small slices.
  • Serve warm with your favourite sauce and some carbs of your choice.
