If you like lamb, you will definitely love this cumin lamb that is so soft and rich in flavor. This is a very healthy meal as it is less oily. The regular cumin lamb that you get in the restaurants is usually deep fried and so can contain a lot of oil. I have made this recipe stir fried to keep the calories low.

It’s a high protein meal and it’s so tasty that you can easily eat a good amount of it to meet your daily protein need.

Best type of lamb to make cumin lamb

I have used a boneless lamb leg for this recipe. You can use lamb leg, shoulder, or shank as these parts contain lean meat. Make sure to cut off any excess fat.  

Do not use the regular lamb chops, ribs or any cutlets that come with bone or a lot of fat. You can also buy the readymade lean lamb stir fry pieces if you can get them to save some time. 

Cooking tips for this pan fried cumin lamb

Cumin lamb

Timing plays very important role in making the cumin lamb. If you undercook the lamb, it will be soggier; and if you overcook it, it will be dry and chewy. So, try and make the timing right.

Unlike the other dishes, you don’t really have to cook the onion and garlic here. Just stir them for about a minute. The raw flavor of onion and garlic makes this dish tastier and a bit crunchy as well.

Cumin Lamb Stir Fry

This cumin lamb is soft, spicy, and rich in flavor. The pan fry method also keeps the calories lower in this high protein meal.

Ingredients
  

  • 500 g lamb boneless
  • 1 tbsp soy sauce
  • 1 tbsp cooking wine
  • ½ tsp salt
  • 1 tsp baking soda
  • 2 tbsp cornstarch
  • 1 tbsp olive oil
  • 1 tbsp sesame seeds

Spices

  • 2 tbsp cumin powder
  • ½ tsp sugar
  • ½ tsp ground sichuan pepper
  • 1 tbsp paprika
  • 10 pieces dry chilli whole
  • 1 piece onion
  • 2 tbsp ginger
  • 5 cloves garlic
  • ½ cup coriander

Instructions
 

  • Slice the lamb across the grain making ½ inch thick strips.
    500 g lamb
  • In a large a bowl put all the marinade ingredients and mix them together.
    1 tbsp soy sauce, 1 tbsp cooking wine, ½ tsp salt, 1 tsp baking soda, 2 tbsp cornstarch
  • Combine marinade ingredients with the lamb. Let it marinade for about 30 minutes.
  • In a bowl mix the following ingredients.
    2 tbsp cumin powder, ½ tsp sugar, ½ tsp ground sichuan pepper, 1 tbsp paprika
  • Chop onion, ginger, and garlic as shown in the picture.
    10 pieces dry chilli, 1 piece onion, 2 tbsp ginger, 5 cloves garlic, ½ cup coriander, 1 tbsp sesame seeds
  • Heat a large pan then add olive oil. when the oil is heated add the marinated lamb.
    Make sure lamb is not to sticking together.
  • Cook in high heat on each side for 3 to 4 minutes. Then take out the lamb in a plate and put aside.
  • On the same pan, put oil and then add chopped ginger and garlic, and whole chilli. Stir for 1 minute.

  • Add onion then saute for a few seconds.
  • Now add the lamb back in. Then combine all together.
  • Add spices that we prepared before. Then toss just to coat the lamb in the spices.
  • In the last step, add coriander and sesame seeds. mix well then it's ready to serve.
