Here’s another protein snacks recipe you can easily make and enjoy with a cup of coffee or tea. This Apple flavoured Oat Cake recipe is way less intimidating and makes extremely good looking and tasty afternoon bites.
I have made a lot of protein bars and cake recipes. What I like about this particular recipe is the use of a few ingredients.
Also, as I’m using a mini loaf baking tray, it makes it super easy as you don’t have to slice the cake after.
The soft silicon based mini loaf baking tray makes it possible just to push and pop out the cakes on this type of tray, just like a medicine tablet. It keeps them perfectly well in shape. If you don’t have this tray, as you may have guessed already, you can bake it on a regular baking tray and then slice them.
Remember to spray some oil on the baking tray and you’ll get the nice well finished edges.
Protein and calories
These cute little cakes are packed with healthy carbs and a good amount of protein to power up your afternoon.
One-serve of these cakes, which is one cake in this recipe, has about 9g of protein and 222 calories.
You can take these protein rich cakes to have them on the go. I like to take them with me when I go on a hike.
Ingredient notes
Almonds
You don’t need roast the almonds to make these cakes. Raw almonds give you the creamy flavour. You may roast them as well if you prefer more crispy and nutty flavour.
Almonds will have slightly more volume after they are crushed. The measurement given here are of whole almonds.
If you want to save a little bit of time, you can buy crushed almonds from the supermarket.
If you are not a fan of almonds, you can opt in for peanuts, cashews, or walnuts.
Oat flour
I usually grind the oats and make oat flour myself. It’s easy and probably cheaper as well. I also find it more fresh and tasty that way.
Protein powder
I usually add a little bit of protein powder in my bakes to make them extra protein rich. However, this is optional ingredient and you can skip this if you don’t have protein powder.
I recommend to use casein protein powder.
Apple and raisins
There’s no added sugar in this recipe. These oat cakes are naturally sweetened with apple and raisins. The combination of sweet and sour from these two fruits produce an amazing taste.
Storage
Keep these cakes in a container and store in the fridge. You can safely enjoy them for up to 5 days.
Apple flavoured Almond Oat Cake
Ingredients
- 2 apple
- 1 cup oat flour
- ⅓ cup almond
- ⅓ cup raisins
- 1 tsp baking powder
- 1 tbsp coconut oil
- 1 tsp vanilla extract optional
- ¼ cup protein powder optional

- Crush almonds using a knife on a chopping board.⅓ cup almond
- Chop the apple and blend until it's smooth.2 apple
- Pour the apple puree in a large mixing bowl. Add the following ingredients and then mix.1 tsp baking powder, 1 tsp vanilla extract, ¼ cup protein powder, 1 tbsp coconut oil
- Then add oat flour, crushed almonds, and about half of the raisins. Mix them well again.1 cup oat flour, ⅓ cup almond, ⅓ cup raisins
- Get a mini loaf baking tray. Spray some oil and fill the pockets with the batter.
- smooth the filling and sprinkle rest of the raisins on top. Push them in a little using a spoon or spatula.⅓ cup raisins
- Bake them on 180℃ / 350℉ for 20 minutes.
- Take the cakes out and let them rest for a few minutes. Enjoy with a coffee or tea.
