Almond & Carrot Protein Cookies

These gorgeous looking cookies are also equally tasty. It's an unique combination of carrots, raisins, and almond flour.

If you never thought you could make cookies out of carrots, it’s time to think again. Well, you are not just using a bunch of carrots to make this recipe, but you got the point. It’s time to enjoy some carrot flavours in a whole different way. 

It’s a nice excuse to eat some veggies or perhaps make your kids eat some carrots if they don’t normally do. I actually think all kids love carrot, but I might be wrong.

What these almond & carrot cookies taste like

While these cookies are crunchy from the outer layer, at the same time they are very soft and buttery in inside. The carrots give that nice soft touch, and raisins bring the natural fruity sweetness, making it taste amazing. 

Thanks to the carrots, these cookies don’t only taste good, they look absolutely amazing. The rich orange and golden colours make them irresistible. 

Protein and calories in these cookies

These homemade healthy almond carrot cookies have around 270 calories and 11g of protein per serve (about 2 cookies). That’s the same amount of protein in one and half whole eggs.

It’s good to have them as snacks and get a little bit of extra protein.

Protein powder for these cookies

I have used whey protein powder for this recipe to make it protein rich. Usually, it’s recommended to use casein protein powder for baking, but I used whey as that’s what I had. You can also do the same. 

Without the protein powder

You can also make these almond and carrot cookies without adding the protein powder. Although the protein amount will be lower as expected, you will still be getting some quality protein from almond flour and the added egg. 

Storage

Put these almond and carrot cookies in a container and store them in the fridge. As the carrot and raisins tend to keep these cookies moist, you should aim to consume them within one week.

Ingredients
  

  • 2 tbsp Coconut Oil
  • 1 tsp Vanilla Extract
  • 1 Egg
  • 1 cup Shredded Carrot
  • 2 cup Almond Flour
  • ¼ cup Whey Protein Powder
  • 40 g Raisins
  • 2 tbsp Oat Milk
  • ½ tsp Cinnamon Powder
  • ¼ tsp Nutmeg Powder
  • ¼ tsp Salt
  • ½ tsp Baking Soda

Instructions
 

  • First, we need to  grate the fresh carrots.
    1 cup Shredded Carrot
  • Now, collect all the other ingredients we need to make carrot cookies.
  • Before starting, preheat the oven to 180°C / 350℉
    In a large bowl, add coconut oil and vanilla extract then mix. Now, crack one egg, add oat milk, then mix well.
    2 tbsp Coconut Oil, 1 Egg, 1 tsp Vanilla Extract, 2 tbsp Oat Milk
  • It's time to add shredded carrots to the batter.
    1 cup Shredded Carrot
  • Add almond flour, whey protein powder, raisins, cinnamon powder, nutmeg powder, baking soda and salt to the mixture.
    ¼ cup Whey Protein Powder, 2 cup Almond Flour, ½ tsp Cinnamon Powder, ¼ tsp Nutmeg Powder, ¼ tsp Salt, ½ tsp Baking Soda, 40 g Raisins
  • Mix all ingredients until everything is well combined.
  • Now it's time to make the cookies. Take a small amount of the mixture in your hand and shape it into your desired cookie shape.
    Bake for 9 to 12 minutes or until you can see your cookies turn golden brown.
  • When you see your cookies are ready, take them out of the oven. Let them cool down for a few minutes.
  • Enjoy your cookies!
