This is my all-time favorite lamb recipe. The lamb in it is so soft, juicy and rich in flavor, which makes the potato taste amazing as well. I call it a perfect dish as it has potato for the carbs, meat for the protein, and a little bit of fat. A healthy combination that is best for keeping you full for longer. This is a protein rich dish.
Preparation
First of all, you’ll need to peel the potato and make small dice shaped pieces. Put the potatoes in a bowl and give a quick rinse. This will make potatoes not stick with each other. It also keeps the potatoes moist and juicy.
After that, microwave the potatoes for about 5 minutes or until they are about 80 percent cooked, depending on your microwave type. You’ll need to cover the bowl during this process.
Here I’m using cherry tomatoes and just putting them as whole. If you have bigger tomatoes, you’ll need to dice them as well.
Serving
This Lamb and Potato Pot already has potato (no kidding 😛), which is a good source of healthy carbs. You don’t really need to serve it with anything else but if you are up for a little bit more carbs then go for some pita bread, roti, or rice.
Variations
You can easily turn this dish into lamb potato curry by adding some boiling water and let it simmer for 2 minutes. I will mention that in the recipe steps.
