Taco Chicken and Bell Pepper Rice

Sometimes it’s hard to believe that something so simple can taste so good. It’s exactly what this Taco Chicken and Bell Pepper Rice is. I would like to call it a lazy man’s dish as you can make a healthy and protein rich meal like this without doing much. 

If you are not much of a rice person, you can skip the rice part and just enjoy the chicken with some baked potato, a toast, or on its own. But it makes it an amazing combination with the bell pepper rice. Try it.

Ingredient notes

Chicken fillet

Make sure to use the skinless and boneless thigh fillet. Do not use chicken breast for this recipe as we aren’t making any gravy and so it won’t be as easy to eat with the rice. 

The amount of taco seasoning for the chicken actually depends on how spicy you want the chicken to be. I have only used the minimal amount here but feel free to bump it up if you prefer. 

If the thigh fillet is too thick or has inconsistent thickness, flatten a little bit by hitting with a kitchen hammer or basically anything that is available to you really. Doing that makes the chicken to be cooked evenly and stay juicy.  

Bell pepper and rice

Try to combine the bell peppers of different colours as they bring a slightly different flavour to the rice. Plus, it makes the rice look beautiful. 

For the rice, I have used the sella basmati rice, but any long grain basmati rice will go well for the bell pepper rice. Do not use short or medium grain like jasmine rice as the rice will tends to stick together. 

Taco seasoning

This is secret ingredient of this recipe as you can’t make taco chicken without taco seasoning. You can usually get this seasoning from your regular supermarket. 

I chose the mild chilli one to make this recipe. 

Protein and calories

This Taco Chicken and Bell Pepper Rice has around 32g of protein and 660 calories. It’s a decent sized meal. What’s good about this meal is, you can adjust the amount of rice as per your need.

If you are watching your calories, I would suggest to go lower on the rice and keep the chicken portion the same for the protein.

Ingredients
  

  • 400 g chicken thigh fillet
  • 1 tsp salt
  • 2 tbsp taco seasoning
  • 1 tbsp olive oil

For rice and veggies

  • 2 cup mix bell pepper
  • ½ piece onion
  • 3 piece garlic
  • 1 cup rice
  • ½ tsp salt
  • 1 tbsp taco seasoning
  • 1 tsp red pepper
  • 2 tbsp lime juice
  • 2 cup chicken stock

Instructions
 

  • Marinade the chicken fillet with taco seasoning and set aside.
    400 g chicken thigh fillet, 2 tbsp taco seasoning, ½ tsp salt
  • Slice the bell pepper and onion.

  • Heat up a non-sticky pan and spread the olive oil. Pan grill the seasoned chicken 6 to 8 minutes each side.
    1 tbsp olive oil
  • Take the chicken out and on the same pan, toss the sliced bell pepper and onion.
  • Stir and then add in the rinsed rice. Then add the seasonings. Stir again.
    1 tsp salt, 3 piece garlic, 1 cup rice, 1 tbsp taco seasoning, 1 tsp red pepper, 2 cup chicken stock
  • Cook it covered for 15 to 20 minutes.
  • Turn off the heat. Stir well, cover again, and let it rest for 5 minutes.
  • Serve the rice in a bowl. Slice the cooked chicken and put on top. Garnish with some greens if you like.
    2 tbsp lime juice
