Chocolate Top Almond & Peanut Protein Bars

It’s a no bake recipe, which is an advantage if you don’t have an oven. I still find it fascinating when I take out the baking tray from the fridge instead of the oven. It’s like a magic 😛 

Calories and protein content

These cute little protein bars are actually not so small in terms of energy. They are probably better called energy bars.  

You can have these calorie-loaded energy bars to power up your busy day. They are packed with around 275 calories and 9g of protein per serve, slightly more protein than in an egg. 

These calorie-dense protein bars can actually help you lower your daily calorie intake by keeping you full for longer. Thay are also full of natural healthy fats.

Rolled oats

Instead of just using the oat flour, I’m using rolled oats to roast them and then grind. It’s important to roast them first as you’re not baking these protein bars in heat.

Almond meal and peanut butter

Together they provide a perfect combination for the flavour and nutrition. They are the main protein drivers of these protein bars. 

Use smooth peanut butter for a better consistency and texture. 

Dark chocolate

I am using 90% cocoa dark chocolate in this recipe. You can use one anywhere from 70% to 90% cocoa chocolate. The higher in percentage you choose, the healthier it is because of the lower sugar and higher cocoa content.

Ingredients
 
 

  • 1 cup rolled oats
  • 2 cup almond meal
  • 1 cup peanut butter
  • ¼ cup maple syrup
  • ½ cup oats milk
  • ½ tsp salt
  • 100 g dark chocolate 90% dark
  • 1 tbsp coconut oil
  • ½ tsp salt

Instructions
 

  • Line a baking tray with parchment paper and set aside. First, on medium-high heat, slightly toast the rolled oats.

  • Blend the toasted oats into oat flour.
  • In a large bowl, add peanut butter and maple syrup and salt, then mix well.

  • In the same bowl, add the oat flour and almond meal.
    1 cup rolled oats, 2 cup almond meal
  • Mix well.
  • Add milk and mix until all mixture combined.
    ½ cup oats milk
  • Now, pour the mixture into your lined baking tray and gently spread it out until it's flat, pressing down gently to cover all areas.
  • Press evenly and firmly over the entire area and set aside.
  • In a microwave-safe bowl, add chocolate and coconut oil.
    100 g dark chocolate, 1 tbsp coconut oil
  • Microwave the mixture for 1 or 2 minutes or until melted.
  • Pour the melted chocolate over the top of the oat and peanut butter mixture and use a spoon to spread it to fully cover the bars. Now, sprinkle some salt over the melted chocolate.
    ½ tsp salt
  • Place the baking tray in the fridge for 15 to 20 minutes or until set. Cut into desired sizes and enjoy!
