Since I came to learn about almond flour, I have made a few recipes so far. The world of baking is limitless and best of all, you can easily tweak any recipe and shape it to meet your dietary requirement. 

In this simple Almond and Banana Protein Cookies recipe, I am using exactly just that as main ingredients. You may already have banana in your home. The only not so common household item in here is the almond flour. You may want to add that in your shopping list now if you don’t already have it. 

It’s also a vegan friendly recipe.

Ingredients

Banana

Use well ripe banana. I’m not adding any sugar or syrup for sweetness in this recipe, so banana works as a natural sweetener here. If you want to increase the sweetness, use the ripest banana. 

The ripest banana may look ugly, but they are gold in making any banana cookies. So, don’t throw them. 

Almond flour

As I’m not using the regular flour here, almond flour is obviously the primary ingredient. Get the blanched almond flour which is best to make these soft cookies. Blanched almond flour is a fine ground of skinless almond. It looks golden. 

Do not use the natural or unblanched almond flour. This flour is made from whole raw almonds and has darker appearance. Using the unblanched flour will make these cookies dry and rough in texture. It will also alter the cookie colour to dark brown. 

Blanched almond flour is the recommended for this recipe. Some almond meal are also blanched and marked as “ideal for baking” or similar wording. You can use that as well.

What do these cookies taste like?

I must tell you; these almond and banana cookies taste completely different than the regular cookies we get from the supermarket. They have this amazing buttery flavour. 

These banana cookies are rather soft in texture than crunchy. Which I found a bit unusual as by the look of it, they indeed look crunchy. I should say, they are in between the cookies and bread scale. 

All these tasty treats were gone within a few minutes when I made them. I also found these almond cookies way more filling than regular cookies which was a nice bonus.

Calories and the protein content

Thanks to the healthy almond flour, these cooking are rich in protein and good fat. I also haven’t used any oil in this recipe which makes these cookies even healthier. Almond flour is also considered low carb flour which is great if you tend to have low carb meals.  

I have added casein protein powder to increase the protein content in these cookies even higher. However, this is completely optional. You can replace the casein protein powder with any plant-based protein powder if you wish to keep it vegan friendly. 

These almond cookies contain around 12g of protein and 215 calories in one serve.

Storage

Make sure to store these cookies in a fridge if you get any leftover as they are moist and high in protein so they can go bad easily if left outside. 

Keep them in a lid tight container and aim to finish them in 5 days.

Almond and Banana Cookies

Ingredients
 
 

  • 1 cup Almond Flour
  • 1 piece Banana
  • ¼ cup Protein Powder
  • ¼ tsp Salt
  • ½ tsp Baking Powder
  • 1 tsp Vanilla Extract
  • ½ tsp Cinnamon Powder

Instructions
 

  • Preheat the oven at 180℃ / 350℉ and line a baking tray with baking paper.
    Take a large bowl, peel the bananas and mash them with a fork until smooth.
    If you want to you cookies more sweeter than use very ripe banana.

  • Now, add salt, baking powder, cinnamon powder and vanilla extract to the mashed banana then mix it all.
    ¼ tsp Salt, ½ tsp Baking Powder, 1 tsp Vanilla Extract, ½ tsp Cinnamon Powder
  • Now time to add almond flour and protein powder.
    1 cup Almond Flour, ¼ cup Protein Powder
  • Make sure all ingredients are combined really well.
  • For each cookie, take 1 tablespoon of dough, shape it into round and make little flat. Then place the cookies onto the prepared baking tray, ensure there is some space between each cookie.
  • Take a fork and create a pattern on each cookie according to your preference.
    Place the baking tray in the preheated oven and bake for 10 to 13 minutes, or until the cookies are slightly golden brown around the edges.
  • Take the cookies from the oven and allow them to cool down.
    Now you can enjoy your high protein cookies.
