Healthy & Crunchy Oat Biscuits

Somehow, I have become a fan of oat and peanut butter recipes. Maybe because they are pretty versatile ingredients and they are always at my home and can make amazingly tasty and healthy snacks. 

Here’s another tasty recipe for Protein Rich Oat Biscuits. Yes, they contain a good amount of protein. I also have sweetened it using mapple syrup instead of the table sugar. Mapple syrup has fewer calories than table sugar. It also has lower GI compared to the table sugar, making it a healthier alternative. 

One serve of these oat biscuits will give you about 7g of protein and 233 calories. That’s 3 pieces of biscuits per serve if you make 18 pieces of them with the given amount of ingredients in this recipe.

What do these oat biscuits taste like

These protein rich oat biscuits do not taste like regular biscuits at all. However, they do taste very similar to one of those healthy wholemeal biscuits you get in the shopping centre, Digestives for example. 

Although these biscuits are relatively higher in calories for their size, they are incredibly filling. They are amazing to have with your afternoon coffee and can recharge you again in no time. 

Ingredient notes

Rolled oats

Rolled oats or simply oats are the main reason for these biscuits to be considered healthy. Compared to wheat, oats are higher in fiber and have a lower GI, making them a healthier choice for heart health and blood sugar control. They also contain a good amount of protein compared to other grains. 

You’ll need to grind the oats to oat flour using a grinder. Alternatively, you can just get the oat flour from the supermarket and save the effort. 

Peanut butter

Peanut butter is packed with flavour and nutrition. I recommend to use smooth peanut butter as it mixes well and helps to shape the biscuits nicely. 

If it’s cold in your place and peanut butter has been solidified, you can microwave the peanut butter in a small bowl for a few seconds to melt it. 

Baking tip

I have used an airfryer tray to make the biscuits crunchy. This tray allows better airflow so you can bake the biscuits without turning them. If you are using a baking paper on a tray, please turn them halfway through.

Tastier and healthier than regular store bought biscuits. They keep you full for longer.

Storage

As oppose to most of the protein bar recipes on this website, these oat biscuits can be kept outside of the fridge in room temperature. 

Keep them in a lid tight container to maintain the crispiness. I like to have them with chai in the afternoon.

Healthy & Crunchy Oat Biscuits

Ingredients
  

  • 2 cup rolled oats make flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 tbsp cinnamon powder
  • cup peanut butter
  • ¼ cup maple syrup
  • ¼ cup oat milk

Instructions
 

  • Preheat the oven to 180°C (350°F).
    Lightly spray your air fry tray with oil and set it aside. Alternatively, line a large baking tray with parchment paper.
  • Grind rolled oats into oat flour using a grinder.

  • In a large mixing bowl, combine all the dry ingredients until thoroughly mixed.
    2 cup rolled oats, 1 tsp baking powder, ½ tsp salt, 1 tbsp cinnamon powder
  • Next, add the wet ingredients and mix well until a dough forms.
    ⅓ cup peanut butter, ¼ cup maple syrup, ¼ cup oat milk
  • If you have time, let the dough rest for 5 to 10 minutes. If you're in a hurry, you can proceed immediately.
  • Place a sheet of parchment paper on your countertop, then place the dough on top. Cover the dough with another sheet of parchment paper and roll it out into a thin layer.
  • Using a butter knife, cut the dough into small biscuit-sized pieces. Use a fork to create a pattern on the biscuits.
  • Place the biscuits onto the prepared airfryer tray.
  • Bake at 180°C (350°F) for 10 to 12 minutes or until the tops are a nice golden color.
  • Remove the biscuits from the oven and let them cool down.
    Now, you can enjoy your biscuits with tea or coffee!
