Here is another tasty, vegan friendly, and healthy protein rich recipe. It’s simple and very easy to make crispy shredded tofu which I’m sure you will love. This crispy shredded tofu is so versatile, you can use it in almost anything.
I have only had tofu with Laksa before, but since I learned more ways to include tofu in a variety of meals, I am pretty obsessed with it. I have been experimenting with tofu by making this easy Teriyaki tofu or the fancy looking tofu cutlets for example.
Protein value in this shredded tofu
You get a decent 17g of protein per serve in this tofu meal, which is equivalent of 2 whole eggs. It’s also important to note that this meal is relatively high in carbs and fats and you might want to consider that. Still, it’s pretty low in calories, just around 400 cals.
Serving
You can actually enjoy this tasty meal on it’s own. It’s kind of a complete meal as it also contains good amount of carbs and fats. However, here are some other ways to include this tofu in your diet-
Avocado tofu wrap
There’s no better ways to have this tofu than making a classic avocado tofu wrap. Simply add some lettuce and a bit of mayo and you are good to go.
Here’s the picture of the tofu wrap I made on another day following this very recipe. It was amazing, I can still feel the taste while typing this. I have included the recipe video for this below in the recipe card.
Tofu salad
This crispy tofu also suitable for making high protein vegan friendly salad. I recommend to have it with some brown rice, cherry tomato, and avocado. Use your favourite sauce to make it juicier. I like garlic aioli.
Tip
If you want to enjoy it as a dry and super crunchy snack, then skip the steps after the roast and just serve the tofu crumbles. But cooking with the sauce after will make the tofu juicy and full of flavor.
For vegans / vegetarians
If you are making this recipe as a vegan or vegetarian meal, please use the soy yogurt and vegan mayo to prepare the sauce. You can get the vegan friendly mayo from your supermarket.
