After making this recipe, I was on a call with my sister and I told her that I just baked some muffins. She got surprised. That’s because I make healthy protein rich recipes and muffins generally are not considered very healthy.
You can absolutely make amazingly tasty, healthy, and high protein muffins by replacing some of the ingredients with the healthier ones. That’s exactly what I did in this recipe.
How these muffins are healthy
Oat flour instead of regular flour
I ground the whole rolled oats to make the oat flour. Compared to the all-purpose flour, oat flour is rich in fiber. This helps improve digestion, control blood sugar, and lower cholesterol.
Oat flour also contains more protein compared to all-purpose flour, which can support muscle repair and growth. Protein also keeps you full for longer, which can help you lose weight.
In addition to that, oat flour has lower Glycemic Index (GI), which doesn’t cause sugar spike.
No added sugar
I have used banana for the natural sweetness in the muffins instead of regular table sugar or syrup.
Choose riper banana if you want more sweetness and more of that fruity flavour.
Eggs and yogurt
I haven’t added any oil or butter to make these chocolate banana muffins. You are getting the healthy fat from the whole eggs and the full cream Greek yogurt.
Eggs and yogurt are also helping to keep the protein profile of these muffins more diverse.
Protein and calories
I made 12 muffins using the amount of ingredients listed on the card below. One of these muffins contains about 8g of protein and 160 calories. That’s a pretty good ratio of protein and calories for a snack.
I have used a small amount of casein protein powder in this recipe but it’s totally optional.
