  • Use baking paper on the loaf pan to make it easy to remove.

  • You can use any flour if you don’t have oat flour.
  • You can easily make your own oat flour at home using a grinder if you have oats.
  • Feel free to replace coconut oil with olive oil or butter.
  • You can use any kind of milk available in your kitchen.
  • If you want extra sweetness you can add some sugar, maple syrup, or honey.

Ingredients
  

  • 2 cup grated carrots
  • 2 cup oats
  • 1 cup walnuts
  • 3 eggs
  • ½ cup oat milk
  • ¼ cup coconut oil
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tbsp vanilla extract
  • ½ tsp salt
  • 1 tbsp cinnamon powder
  • ¼ cup protein powder

  • First, preheat your oven on 180 ℃ / 350℉. Line a cake pan with baking or parchment paper, then lightly spray it with oil to make it easy to remove the bread.
    Fine chop some walnuts and set them aside.

  • Now, shred the carrots using a grater.
    You can peel the carrots before grating, or leave the peel on for extra fiber—I’m leaving the peel on.

  • Next, use a grinder to make your own oat flour by grinding oats.

  • It's easy to make oat flour using oats.
  • Instead of the usual method, start by taking a large mixing bowl and adding all the dry ingredients along with the grated carrot. Mix everything together really well before incorporating the wet ingredients.

  • Add the egg, oil, vanilla extract, and milk.

  • Then stir thoroughly.
  • Now mix in half of the walnuts and the protein powder until well combined.

  • It’s time to bake! Pour the batter into a prepared bread tin, ensuring the edges are evenly filled. Sprinkle the remaining walnuts on top of the carrot batter.
  • Bake the carrot bread on 180℃ / 350℉ for 40 to 45 minutes or until they turn nice and golden on the edges. You can check if it's ready by inserting a toothpick into the middle of the cake. If the toothpick comes out clean then your cake ready. Otherwise, bake a few more minutes.
  • Once baked, let the bread cool completely before making the slices.
